Heat a sauce pan to medium heat and add a TBS of Extra Virgin Olive Oil (Terra Foods maybe)
Sauté the almonds and mustard seeds in the oil for 1 minute then add the green onions or garlic scapes for another minute or so until softened.
Add zucchini then increase to medium-high heat and cook for 3-4 minute until softened but not mushed.
Remove from heat add the herbs and let sweat for a minute.
Salt and pepper to taste
Serve hot as a side dish to your main
